The Fat Maker - Insulin

High Insulin is your worst enemy in the battle for a lean physique.  When you eat a meal or snack that spikes your blood sugar rapidly, Insulin comes to the rescue to lower it again.  It clears out the sugar and stores it away as glycogen and/or bodyfat.  Glycogen is stored carbohydrate.  This is energy that is readily accessible to be used for intense physical activity.  

Your body stores glycogen in two places: the muscles and the liver.  Anytime you spike your blood sugar, your body will store away as much glycogen as it currently needs, and then the remainder will go to be stored as bodyfat.
